Whilst Climate Change has already had an impact on the extent and severity of our winter weather, it is still the time when the natural world has closed in on itself and the naked, leafless trees are matched by equally bare ground. However there is much comfort to be gained from traditional winter warming stews and soups.
Many root vegetables are only now in season. The chance to grow your own is not available for everyone, but some of the best swede I have eaten was straight off the fodder heap from a neighbour’s farm yard, freshly dug from the field and all I had to do was ask.
